Why Do We Use Unbromated Flour
Potassium Bromate is an additive included in flour production that improves the flour. It strengthens the dough and makes the dough rise faster. This is helpful for larger bakeries. However, Potassium bromate is an additive that is classified as a category 2B carcinogen which may be cancer causing and overall unhealthy. It has been banned in most countries other than the United States.

Although in the United States it is used because the potassium bromate is completely used up in the baking process, which is believed to remove the cancer threat, Brian's Foods has modified our recipes to include only UNBROMATED flour to make sure our customers are not concerned by the potential threat of potassium bromate. We want to try and help our customers stay healthy while enjoying our products.

Why Do We Use Enriched Flour
All Brian's Foods products are now made with enriched flour. Enriched flour is made with extra nutrients that are not generally found in flour. These nutrients are normally taken out of the flour during the process of milling the grain.

Why we use NON-GMO
We chose to make all of our products non- GMO. GMO, (or "genetically modified organisms"), are anything living that has been genetically altered in a laboratory. For your safety, we make sure not to use any GMO products in our recipes.

Why Go Beyond OU?
While OU is the standard for Kosher on a very high level, those that choose to add an additional level of Kosher adherence look to certifications referred to as 'Heimeshe Hechsherim'.  CRC - The Central Rabinical Congress (not to be confused with CRC Chicago, another respectable Kosher organization) is to Heimeshe Hechsherim what OU is to standard Kosher.  It is the most widely sought after.

Cholov Yisroel and Pas Yisroel

Isn't any cheese acceptable for Brian's Foods?
Cholov Yisrael (Hebrew: חלב ישראל‎), is a term which refers to all dairy products, including cheese and non-fat dry milk powder, which derive from milk that has been milked under the supervision of a religiously observant Jew.  According to Jewish law, milk is only considered kosher if it derives from a kosher species of animal (such as cows and sheep), while milk from a non-kosher species (such as horses and camels) is non-kosher.  This certification is stating that the milk processing was overseen by a religiously observant Jew who is well versed in the Jewish laws.  This individual assures the process was done properly and the milk was not intermingled with non-kosher milk and was not tampered with. 

What about the dough?
Pas Yisrael (Hebrew: פת ישראל‎), In Jewish law, Pas Yisroel or Pat Yisrael (Hebrew: פת ישראל‎ lit:"Bread of an Israelite") products are grain-products that were cooked or baked with the participation of an observant Jew.  While any bread with kosher ingredients is considered kosher on a basic level, it is considered praiseworthy to fulfill the stricter standard of only eating pas yisroel.

Vegetarian

Brian's foods is certified by the American Vegetarian Association. All products contain no meat, eggs, or fish. 

*Being Vegetarian generally satisfies the requirements of Halal because they have similar restrictions. For example, vegetarianism does not allow for any forms of meat. Additionally, Brian's Foods products are Kosher which will close any other gaps.
